HOW TO STORE // wash well before storing in the vegetable drawer of a fridge wrapped in damp kitchen towel. Will keep well for around 10 days.
You're probably wondering why I would write an inspiration post about carrots. Everyone knows what to do with carrots, right?! But sometimes we get so used to something being around we fail to see their full potential. So I hope by this post I inspire you to see carrots in a new light.
I snack on carrots during the day or while I'm making dinner - it's something to pick on when hungry. But otherwise you can do anything you like with a carrot (ahem) - toss in oil and roast, shred in a slaw, chuck in a Thai curry, make an asian salad, juice with some mint and apple, make a super quick carrot and coriander soup, rustle up a carrot cake or just toss with some sesame oil and chilli for a simple side to just about anything. Because my carrots are organic, I don't peel them so this makes them even easier to handle.
